Approved Menu Items
- Salad with grilled chicken or shrimp: Lettuce, tomatoes, cucumbers, carrots, 4 oz. grilled chicken cut into strips or 6 grilled jumbo shrimp, Served with 2 tbsp. Ken’s Light Italian dressing on the side
- Grilled Fish Dinner: 2 Fish Fillets (3-5oz. per fillet; Basa or Catfish) grilled with olive oil, served with choice of two side dishes.
- Grilled Chicken Breast Dinner: 4 oz. grilled chicken breast grilled with olive oil, served with choice of two side dishes.
- 6 or 12 piece Grilled Shrimp Dinner: Shrimp grilled with olive oil, served with choice of two side dishes.
- Baked Chicken Dinner (Wednesday Special): Oven-baked chicken quarter (thigh and drumstick), served with two side dishes.
Side Dishes: Serving size for each is 4 oz.
- Sauteed Cabbage – cabbage, onion, bell peppers and tomatoes, sauteed in olive oil.
- Vegetable Medley – yellow squash, zucchini squash, onions, bell pepper, sauteed in olive oil.
- Salad: lettuce, tomatoes, cucumbers and carrots, served with Ken’s Light Italian dressing on the side.
- Red Beans: Seasoned with smoked turkey neck, bay leaves, garlic powder, pepper, pinto bean seasoning (2 tbsp) and fajita seasoning (2 tbsp).
- Black-eyed peas: Same as red beans except half the amount of pinto bean and fajita seasoning.
